Blueberry Compote

Servings 5 1/4 cup servings

1 1/4 cups frozen blueberries, unthawed  – $1.82*
2 tablespoons + 2 teaspoons sugar – $0.05
3 tablespoons water

Total for recipe – $0.38 per serving
Calories: 90.4 Fat: .5 Protein: .4

Combine 1 1/2 cups blueberries, sugar and 1/3 cup water in heavy small saucepan.
Simmer over medium heat until berries burst, stirring often, about 10 minutes.
Add remaining 1 cup berries.
Cook until compote coats spoon, stirring often, about 8 minutes.
(Can be made 3 days ahead. Cover and chill.)
Serve warm.
Save some of this in the fridge, it’ll go on pancakes later in the week.

*This price is based on what I find them for at Trader Joe’s or WF, their generic brands. Dole is outrageously priced. They’re frozen, for pete’s sake. If you can only find them for $4.99 a bag, add another $0.18 per serving. This doesn’t seem like a lot, but I use blueberries kind of a lot, so it adds up.
