Buttermilk Pancakes, Eggless

Serving – 3 pancakes

1/4 cup Pancake Mix $0.10
1/4 cup buttermilk $0.14
1/2 teaspoon vegetable oil $0.01
1 teaspoon butter (or cooking spray) $0.04

Total for recipe – $0.29 per serving
Calories: 226 Fat: 7.6 Protein: 6  

If using cooking spray instead of butter (I don’t and further tallies will reflect that. If you do, you’re a better person than I am.)

Total for recipe – $0.67 per serving
Calories: 193 Fat: 3.8 Protein: 6  

Heat pan on medium low heat.
Gently mix buttermilk and oil with mix, thinning with extra buttermilk as necessary (or seltzer water for a fluffier pancake).
Melt butter in pan or spray with cooking spray.
Ladle onto pan.
When the surface is bubbled, and the undersides are brown, about 1-2 minutes, flip. Cook other side for 30 seconds.
Serve.

These pancakes aren’t super-flavorful. You will need some compote to dress it up –
