Cut the ends of the green beans and rinse.
Put a large pot of water on to boil with a lot of salt (more than you think you need. Trust me.)
Add green beans.
Keep it to a high boil. The faster the cooking, the better the flavor and color.
Cook until just tender.
Shock the beans in an ice bath. This will fix the color.
Drain when cold. Do not leave them in the ice bath. Nutrient and color will leech into the water.
Melt butter in a saute pan.
Add almonds and garlic and cook until the nuts are just beginning to brown, about 1-2 minutes.
Add green beans to the pan and saute briefly, another minute.
Sprinkle with lemon juice.
