Bring the chicken stock to a simmer.
Heat butter in pan and add the mushrooms.
Sear the mushrooms and add the onions.
Saute until the onions begin to soften.
Add the rice and stir, but do not allow the rice to brown.
Add the wine and cook until absorbed.
Add the stock 1/2 ounce at a time, stirring frequently.
Wait until the stock is absorbed before adding the next portion. Use as much stock as need to cook the rice for 18-20 minutes.
After approximately 18-20 minutes, the rice should be tender.
Remove from heat and add parmesan.
